Compaignon

Compaignon is a program centered around French food and wine. This current iteration specifically focuses on the region of Alsace, France.

As temperatures cool and the holidays approach, Alsace felt like it held the perfect French food to bring to our city.

With the region being known for its Winter Markets, this menu encompasses all of the warm, rich flavors you crave when it’s cold out. Hearty dishes with notes of cultured dairy and root vegetables remind one of sitting in a cozy cottage off the Rhine, with a big pot of cassoulet simmering in the hearth.

It’s a meal to share with your friends, family, and loved ones to make the winter feel a little more warm.

This menu features many popular dishes from that region, but the star of the meal is a whole, French demi-baguette, whose purpose extends far beyond acting as a vessel for salted butter or plum compote. But sets its place as a physical representation of the community that comes with sharing a meal and more specifically, breaking bread together. “The origin of the word ‘compaignon’ relating to the breaking of bread really resonated with me.”, says Chef Caitlin, “As a bread enthusiast, I really wanted to honor the role it plays in nurturing friendship and community.”

For Julia, “Compaignon is a celebration of community. It’s a meal to be shared with the people you love. It reminds me of how I eat with my family - passing around food, splitting dishes, dipping bread into every sauce we can reach. I hope that those who come to eat feel the same nostalgia as I do when they eat this meal.”
